Barry Callebaut has launched Flavourcode™, a proprietary cocoa fermentation approach designed to develop distinctive natural flavour profiles and reproduce them consistently, from artisan chocolate-making to industrial food manufacturing.

Developed through years of research into cocoa fermentation, the platform aims to unlock new flavours within cocoa beans without adding flavourings. It also addresses the natural variation in cocoa characteristics between origins, harvests and seasons, helping manufacturers achieve greater consistency.

The launch comes amid growing consumer interest in more complex chocolate experiences. Research conducted by Barry Callebaut across 24 markets found increasing demand for distinctive and immersive taste profiles, creating opportunities for brands to differentiate their products.

First product targets chocolatiers and chefs

The first commercial product, Callebaut Flavourcode™ 01, has been developed for chocolatiers, chefs and artisans. Its flavour profile combines tropical fruit notes, including passion fruit, pineapple, mango and ripe banana, followed by dried-fruit characteristics and a cocoa finish.

Designed for applications including pastry, confectionery, ice cream and plated desserts, the product aims to give professionals greater scope for creativity while maintaining a consistent result between batches.

“Flavourcode™ 01 brings an unusual combination to the kitchen: a taste profile with real personality and the reliability needed to build it into pastry, confectionery, ice cream and plated desserts,” said Ramon Morató, head of the Barry Callebaut Chocolate Academy™ Centre.

Potential for wider manufacturing applications

Barry Callebaut is exploring further applications for the platform across food manufacturing, including potential dark chocolate profiles at 70% and 54% cocoa, alongside milk chocolate.

Chief executive officer Hein Schumacher said the technology could provide a foundation for a broader innovation platform spanning the company’s Gourmet and Food Manufacturing businesses.

The launch was unveiled in Antwerp alongside the World Chocolate Masters 2026 final and Callebaut Innovation Summit, bringing together culinary professionals, researchers and industry leaders.
