We are delighted to announce that Isobel Carse, Owner and Chocolate Maker at Dormouse Chocolates and Chair of the Craft Chocolate Association UK & Ireland, will join this year’s programme as part of a panel discussion titled “Why a Craft Chocolate Association?”
As the craft chocolate movement continues to grow, so too does the need for greater collaboration across the industry. Isobel’s session will explore why industry associations matter, how collective action can strengthen the sector, and the role the newly launched Craft Chocolate Association UK & Ireland will play in supporting makers, promoting best practice and representing the interests of craft chocolate businesses.
After discovering a passion for bean-to-bar chocolate while working for a larger chocolate manufacturer, Isobel founded Dormouse Chocolates eleven years ago. Since then, the company has become one of the UK’s most respected craft chocolate makers, earning recognition from both the Academy of Chocolate and the International Chocolate Awards for its commitment to exceptional quality, ethical sourcing and flavour.
Alongside building Dormouse Chocolates, Isobel has been instrumental in bringing together independent chocolate makers from across the UK and Ireland to establish the Craft Chocolate Association UK & Ireland, which officially launched in January 2026. The organisation aims to provide a united voice for the growing craft chocolate sector, encouraging knowledge sharing, professional development and stronger collaboration both nationally and internationally.
The timing is particularly significant. Consumers are increasingly seeking chocolate with clear provenance, transparent supply chains and distinctive flavour profiles, while manufacturers continue to navigate rising cocoa costs, evolving sustainability legislation and growing expectations around ethical sourcing. These challenges are encouraging businesses of all sizes to work more closely together to share expertise and build a more resilient industry.

The panel discussion will also examine the Association’s relationship with the wider European craft chocolate community and the importance of cooperation in addressing shared opportunities and challenges across the value chain. Additional panellists will be announced in the coming weeks.
